This fall season,\u00a0try experimenting with these recipes that include different types of squash. Not only is this vegetable incredibly diverse and tasty, it also offers a healthy dose of Vitamin C, iron and potassium!<\/p>\n<p class=\"p1\"><strong><span class=\"s1\">Fiesta Stuffed Acorn Squash<\/span><\/strong><\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-1620 size-full\" src=\"http:\/\/fananddigital.com\/nakoafit\/wp-content\/uploads\/2017\/10\/Fiesta-Acorn-Squash-Picture.jpg\" alt=\"Fiesta Stuffed Acorn Squash Recipe\" width=\"650\" height=\"390\" srcset=\"http:\/\/fananddigital.com\/nakoafit\/wp-content\/uploads\/2017\/10\/Fiesta-Acorn-Squash-Picture.jpg 650w, http:\/\/fananddigital.com\/nakoafit\/wp-content\/uploads\/2017\/10\/Fiesta-Acorn-Squash-Picture-300x180.jpg 300w\" sizes=\"auto, (max-width: 650px) 100vw, 650px\" \/><\/p>\n<p class=\"p1\"><span class=\"s1\">Ingredients:<\/span><\/p>\n<ul>\n<li class=\"p1\"><span class=\"s1\">1 acorn squash<\/span><\/li>\n<li class=\"p1\"><span class=\"s1\">1 cup cooked quinoa (or rice)<\/span><\/li>\n<li class=\"p1\"><span class=\"s1\">1 can black beans (drained and rinsed)<\/span><\/li>\n<li class=\"p1\"><span class=\"s1\">1 medium yellow onion<\/span><\/li>\n<li class=\"p1\"><span class=\"s1\">2 cloves of garlic chopped<\/span><\/li>\n<li class=\"p1\"><span class=\"s1\">1\u20442 teaspoon cumin<\/span><\/li>\n<li class=\"p1\"><span class=\"s1\">1\u20442 teaspoon chili powder<\/span><\/li>\n<li class=\"p1\"><span class=\"s1\">1 tablespoon coconut oil<\/span><\/li>\n<li class=\"p1\"><span class=\"s1\">1 avocado<\/span><\/li>\n<li><span class=\"s1\">Salt and pepper to taste<\/span><\/li>\n<li class=\"p1\"><span class=\"s1\">2 tablespoons chopped cilantro (optional)<\/span><\/li>\n<\/ul>\n<p class=\"p1\"><span class=\"s1\">Instructions:<\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">Preheat oven to 350 and pierce squash with fork. Place on sheet pan and bake until tender (about 45 minutes). Remove from oven and change setting to broil. Set squash aside to cool for 15 minutes. <\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">In the meantime place a saucepan over medium heat. Add chopped onion and garlic. Add cumin, chili powder, and salt and pepper. Once well combined add in black beans and cooked quinoa. Remove from heat.<\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">Once the squash is cooled. Slice it in half and discard seeds. Brush inside and edges with coconut oil. Fill in with black bean quinoa mixture. Broil in the oven until heated through. Around 5 minutes. Top with cilantro and avocado. <\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">Enjoy!<\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">NOTE: You can add ground beef, turkey, or chicken to this as well for a more protein-rich meal.<\/span><\/p>\n<p class=\"p1\"><span class=\"s1\"><strong>Roasted Butternut Squash Soup with Bacon<\/strong> <\/span><\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-1622 size-full\" src=\"http:\/\/fananddigital.com\/nakoafit\/wp-content\/uploads\/2017\/10\/Roasted-Butternut-Squash-Soup-3-e1508787171953.jpg\" alt=\"Roasted Butternut Squash Soup with Bacon Recipe\" width=\"659\" height=\"472\" srcset=\"http:\/\/fananddigital.com\/nakoafit\/wp-content\/uploads\/2017\/10\/Roasted-Butternut-Squash-Soup-3-e1508787171953.jpg 659w, http:\/\/fananddigital.com\/nakoafit\/wp-content\/uploads\/2017\/10\/Roasted-Butternut-Squash-Soup-3-e1508787171953-300x215.jpg 300w\" sizes=\"auto, (max-width: 659px) 100vw, 659px\" \/><\/p>\n<p class=\"p1\"><span class=\"s1\"><em>Ingredients:<\/em> <\/span><\/p>\n<ul>\n<li class=\"p1\"><span class=\"s1\">1 large butternut squash (peeled and chopped into cubes) <\/span><\/li>\n<li class=\"p1\"><span class=\"s1\">1 yellow onion, chopped <\/span><\/li>\n<li class=\"p1\"><span class=\"s1\">1 red bell pepper, chopped <\/span><\/li>\n<li class=\"p1\"><span class=\"s1\">1 teaspoon fresh thyme <\/span><\/li>\n<li class=\"p1\"><span class=\"s1\">2 \u00bd cups chicken stock (or bone broth) <\/span><\/li>\n<li class=\"p1\"><span class=\"s1\">\u00bc cup crumbled goats cheese <\/span><\/li>\n<li class=\"p1\"><span class=\"s1\">4 slices of bacon, chopped <\/span><\/li>\n<li class=\"p1\"><span class=\"s1\">2 tablespoons olive oil <\/span><\/li>\n<li class=\"p1\"><span class=\"s1\">2 cloves of garlic <\/span><\/li>\n<li class=\"p1\"><span class=\"s1\">1 teaspoon chives, chopped <\/span><\/li>\n<li class=\"p1\"><span class=\"s1\">Salt and pepper to taste <\/span><\/li>\n<\/ul>\n<p class=\"p1\"><span class=\"s1\">Instructions: <\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">Preheat oven to 400. Lightly coat a baking sheet with olive or coconut oil. In a single letter place squash, bacon, onion, bell pepper, and season with salt and pepper. Toss gently to combine. <\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">Bake in the oven for 25-30 minutes. Coat bottom of the pot or dutch oven with olive oil over medium heat. Add bacon from oven and cook until crispy. Remove bacon and set aside. <\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">Add chicken stock, thyme, and garlic and roasted vegetables. Bring to a boil then turn heat down to low heat. Blend with a hand-held immersion blender (can also add batched to regular bender).
